Courtney's Holiday Muddy Buddies/Puppy Chow {BLISSful Recipe}

It is the official start of the holiday season and here in Alaska we are already hunkering down for a cold winter! My philosophy throughout my weight loss and now maintenance is not to deprive myself of all the things that make me happy, including food! It's one of the things that has helped me be so successful!

If you have my Holiday Cookbook then you've seen that so many of our holiday favorites can be made Keto so that we don't feel deprived (and even the non keto eaters love them all too!). I wanted to share this fun recipe I developed for a great snack for holiday or any time! Kids LOVE this recipe!

There is no need for grain-based cereal or carb laden snacks when you can have this delicious alternative! So, here is a Keto With Courtney twist on a classic favorite: Muddy Buddy's/Puppy Chow. That decadent carb laden sugar coma treat we all know and love-now made weight loss friendly AND delicious!

Courtney’s Keto Holiday Muddy Buddies/Puppy Chow

INGREDIENTS:

  • ½ Cup Natural Sugar-Free Peanut Butter

  • 1/3 Cup Coconut Oil

  • ¼ Cup Kerrygold Salted Butter

  • 4 TBSP quality Cocoa Powder

  • ¼ Cup + 2 Tbsp. Powdered Xylitol/Stevia Blend ( recommended: THM Gentle Sweet)

  • 8 oz. original (sugar-free) Pork Rinds

INSTRUCTIONS:

In a small pot, add peanut butter, coconut oil, butter, cocoa powder, and ¼ cup of the xylitol/stevia blend over medium heat. Melt all ingredients and mix until well combined.

In a large bowl, add pork rinds. Pour chocolate mixture over top pork rinds, and mix until well covered. Tip: Crush pork rinds into small pieces to make pieces easier to cover. In a sifter or strainer, add 2 tbsp powdered xylitol/stevia blend, and gently sprinkle over the top of the "puppy chow" until well-covered.

Chill for at least 60 minutes in the refrigerator.
