Courtney's Summer Salad and Sweet Poppyseed Dressing {BLISSful Recipe}

This is just my favorite light but hearty salad with a sweet kick! Just in time for summer!

Courtney's Summer Salad

1 Cup Spinach

1/2 Cup Butter Lettuce

25g Sliced Red Onion

25g Diced/Sliced Fresh Strawberries

25g Diced Avocado

1/4 Cup Feta Cheese (Crumbled)

2 T Walnuts, chopped

(or Swap out the 2 T Walnuts for 1 T roasted sunflower seeds and 1 T pumpkin seeds)

Roasted/Rotisserie Chicken (2-4oz)- I use 2oz

Calories/Macros for Salad: 325 Calories, 25g Fat, 8g Carbs, 5g Fiber, 23g Protein

Courtney's Sweet Poppyseed Dressing

1/2 Cup Extra Virgin Olive Oil

1/2 Cup THM Gentle Sweet

1/3 Cup White Vinegar

1 tsp Ground Mustard Seed

2 T Poppy Seeds

1 tsp Garlic Powder

Pinch of Salt/Pepper

Calories/Macros for Dressing: Serving size 2 T (makes about 10 servings) 120 Calories, 12g Fat, Negligible/Trace carbs, fiber, and protein
