Courtney's Mashed Cauliflower {BLISSful Recipe}

Comfort food is really one of those things I personally can't give up. So this recipe is the perfect sub for mashed potatoes! Actually to be honest, I like it better! So deliciously creamy and the perfect side for any keto meal!

Why buy the store bought brands that have extra added fillers and hidden carbs? Whip up this delicious dish instead!

Courtney’s Mashed Cauliflower

Serves: 4-6 People; Approximately 1/3 Cup Per Serving

INGREDIENTS:

- 1 Large Head of Fresh Cauliflower, Cut into Small Florets

- 2 Tbsp. Sour Cream

- 1 Tbsp. Cream Cheese

- 1 Tbsp. European Salted Butter (plus optional butter for topping)

- ¼ tsp. Pink Salt

- ¼ tsp. Ground White Pepper

- Optional: Chives as garnish

Instructions:

Place the cauliflower into a steam basket and cook over boiling water (add salt to water). Cook until cauliflower is very tender (about 8 minutes). Remove from heat and let cool slightly. Press as much water as possible out of the cauliflower by wrapping the florets in a towel/paper towels and pressing firmly. Transfer cauliflower to a food processor. Add sour cream, cream cheese, butter and seasoning and process until smooth and creamy.

Serve hot, add a pat of butter to the top and chopped chives and/or herbs for garnish. Enjoy!
